Woohoo, another year
WOW. It is hard to believe that my life is going by so fast!
We have been busy with just that...LIFE...... Carl is gardening and
I am still trying new recipes. Last night was definitely a keeper. I had
watched a Paula Deen episode on TV where she made an appetizer
with lobster. It looked yummy and so easy to make, so I thought..
hmmmmmm, why not make that into a main dish and turn it into a
sauce for some kind of pasta ????
This was the simplest dish I think that I have ever made and it
was soooooo GOOD! Now that may have been since I did not
clean the shrimp (did I say that I substituted shrimp for lobster?)
and I did not cut up the bell peppers or mince the garlic?
Anyway, a friend of mine had brought me several red bell peppers
(when they were on sale) and I cleaned and chopped them up
and put them in zip lock bags in the freezer. When I need some,
I just take what I need out of the bag and put the rest back in
the freezer and Carl's job is to ALWAYS clean the shrimp.
So, here's the deal.
Approximately 6-8 tablespoons of butter in large frying pan, then
add 1/4 cup of red bell pepper and 1/4 cup of onion and some minced garlic
(I did not measure the garlic- probably a tablespoon & I used the
garlic from a jar). Saute all of this, then add whatever shrimp, or
lobster that you want to use. That should be ready in just a couple
of minutes, then melt 8 oz of cream cheese into mixture and add
enough milk to make it the consistency for the pasta and VOILA,
you have it! Done, probably less than 10 minutes if your ingredients
are ready to go beforehand.
I had company over and I did not have POUNDS of shrimp, so,
I took what I had, which was about a pound of large shrimp and
cut them up into small bite size pieces before I cooked them and
it stretched the dish a lot further and I liked the way it looked in
the dish as well.
Then I made a broccolli salad and an absolutely beautiful
coconut cake. We ate, played cards and had a great time.
Our usual Friday night entertainment.
